This month's theme looks at the difference in ageing between 'sur pointe' (within the base of the bottle neck) versus 'sur latte' (ageing laying flat) and how that impacts the style of the champagne.

Our two producers are Ployez-Jacquemart from Ludes in the Montagne de Reims and Palmer & Co. based in Reims (originally from Avize).
