- Red wine colour is produced by crushing the Pinot-Noir or Pinot-Meunier grapes which produce a white extract, but when allowed to remain in contact with the skin for an extended period of time, turns the extract red.
- Both these grape varieties can remain white coloured if the skins are separated soon after crushing. The Chardonnay grape extract retains a white colour or slightly green if the skins are allowed to sit in the extract.
- 100% Chardonnay is referred to as Blanc de Blancs
- 100% of Pinot-Noir or Pinot-Meunier that is left as a white extract is known as Blanc de Noir.
