A Brief Overview of Champagne

We’d just like to share a little insight into champagne that might be of some use to you in helping you to select your bottle of bubbly.
The basics are that champagne is made from a blend of two or three grape varieties and on the rare occasion, from a single grape variety. The three varieties are Pinot-Noir a red grape, Pinot-Meunier a red grape and Chardonnay a white (also known as a green) grape.
- Current regulation only allows champagne producers to make champagne with these three grapes, either as a blend, or 100% from a single grape variety.
- Red wine colour is produced by crushing the Pinot-Noir or Pinot-Meunier grapes which produce a white extract, but when allowed to remain in contact with the skin for an extended period of time, turns the extract red.
- Both these grape varieties can remain white coloured if the skins are separated soon after crushing. The Chardonnay grape extract retains a white colour or slightly green if the skins are allowed to sit in the extract.
- 100% Chardonnay is referred to as Blanc de Blancs
- 100% of Pinot-Noir or Pinot-Meunier that is left as a white extract is known as Blanc de Noir.

Champagne Fleury’s conversion to biodynamics was at the hands of Jean-Sébastien’s father, Jean-Pierre. His interest in sustainable wine growing began in the 1970s when he tried using manual tilling (as opposed to herbicides) and composting (as opposed to synthetic fertilizers). He began a trial with biodynamics, applying it to just 3 hectares, in 1989 and then in 1992 used it across the whole of his vineyard holdings. All 15 hectares that Fleury own (90% of which is Pinot Noir) are cultivated using biodynamics, which makes them the largest biodynamic producer in the entire Champagne region. Recently, two colleagues in the same village of Courteron were so impressed by the benefits that they have also switched, bringing the total to some 30 hectares in this village. Champagne Fleury’s conversion to biodynamics was at the hands of Jean-Sébastien’s father, Jean-Pierre. His interest in sustainable wine growing began in the 1970s when he tried using manual tilling (as opposed to herbicides) and composting (as opposed to synthetic fertilizers). He began a trial with biodynamics, applying it to just 3 hectares, in 1989 and then in 1992 used it across the whole of his vineyard holdings. All 15 hectares that Fleury own (90% of which is Pinot Noir) are cultivated using biodynamics, which makes them the largest biodynamic producer in the entire Champagne region. Recently, two colleagues in the same village of Courteron were so impressed by the benefits that they have also switched, bringing the total to some 30 hectares in this village.
