They are located in the small village of Urville in the Côte des Bar where Pinot Noir, the predominant grape variety, finds its purest expression and allows the production of very elegant, aromatic wines. With an annual production of some 1.5 million bottles, they are considerably larger than a small grower, but not quite of the size of the Grande Marques in and around Reims and Epernay. Drappier is one of the foremost producers in the region which is highly respected amongst its peers like Cédric Bouchard, Marie-Courtin, Vouette et Sorbée, and Jacques Lassaigne. They own 55 hectares of vineyards and use another 50 hectares under contract with other growers. A an interesting historical fact is that Charles de Gaulle (the Former Minister of the Armed Forces in France) was very fond of their Champagne and they named a cuvée after him. Amongst their range of excellent cuvées, they have a range including a ‘Sulphur free’, ‘Zero dosage’, and a ‘Blanc de blancs’ that contains a forgotten grape called Blanc Vrai.

Technical Notes

Only the juices from first pressing – the cuvées - are used with mechanical low-pressure presses and use of gravity to avoid pumping, which avoids oxidisation.

Amongst their range of excellent cuvée’s, they have a range including a ‘Sulfur free’, ‘Zero dosage’, and a ‘blanc de blancs’ that contains a forgotten grape called Blanc Vrai.

Review

"Described by Drappier as 'almost a blanc de noirs', this Pinot Noir-dominant wine sourced from the Côte des Bar is the house's calling card. 5% of the cuvée is matured in barrels for a year for added complexity and texture, and it's bottled unfiltered with a fairly low dosage of 7g/l. There are some melon and apple scents on the nose along with a splash of red fruits, while the palate is intense, with notes of apple, quince and grape wrapped in a red-fruit veil. Both coming from a family of vignerons: François's grandparents bought their vineyards in Avize in the 1940s' and up to 2015 have been selling their wines, whereas Justine's family were established back in 1640 in the town of Niedermorshwihr in Alsace. They are passionate about soil and farming organically, with no pesticides, to recreate biodiversity and strengthen soil structure, as well as the encouraging the old vines to dig deeper. The vineyards were planted in the 1950's in the heart of the Côte des Blancs: Avize and Cramant, both classified as Grand Cru villages. Since 2000 they have started vinifying independently. They produce an excellent range of champagne at their state-of-the-art facility, from their award-winning Brut right through to their Prestige Cuvée – Cuvée Charles, in honour of their founder Charles Collin who was the man behind the grower vision back in the early 50’s.Over 90% of the vineyards are planted with Pinot noir, the remainder being planted with chardonnay. This is reflected in the range with the wines showing purity, expression and finesse. They are a young and dynamic team led by the talented winemaker Guillaume Cartier.

Food pairing

Pair with clean, healthy sashimi with healthy doses of pickled ginger and Yuzu.

Awards

Silver Medal at International Wine 2021

"}
