This side valley has a unique soil in Champagne: a schist subsoil under clay. While Pinot Meunier often struggles to be taken seriously in Champagne, at Moussé, Pinot Meunier is celebrated. 80% of the vines planted are Meunier, with the balance planted to Pinot Noir and Chardonnay. This agency is the first member of Club Trésors de Champagne to make a Spécial Club wine of 100% Pinot Meunier and the first Club member to produce a Rosé de Saignée Spécial Club. In the vineyards, Cedric Moussé adheres to a ‘lutte raisonée’ approach. He practices organic viticulture, using herbal infusions that act as ‘vitamins’ for the vines, cover crops, zero pesticides, and minimal doses of heavy metals like copper. His new winery, completed in 2012 may be deceiving; the modern facility leads us to believe this is a new operation. Solar panels power the cellar, tasting room, and 2 houses on the property, while geothermal energy moderates temperature throughout the winery. An underground spring provides enough water for irrigation on the farm. Moussé works almost exclusively in stainless steel, with the exception of a small amount of Pinot Meunier destined for his rosé. All cuvées undergo malolactic fermentation. This minuscule single plot of meunier is situated on a challenging 45 degree slope with a fortunate south facing aspect. The owners Julien and Stephanie produce a tiny 4 barrels of delightful biodynamic, 100% pinot meunier wine as well as a few bottles of Ratafia. We are incredibly privileged to have a small allocation of this rare stock.

How Ratafia is made

Ratafia is made using the grape juice of the third or fourth press of the grapes that would be other wise considered waste. Most champagne houses only use the first press – the cuvee – of the grape juice and are forbidden from using the third press, known as Rebeche, and beyond. This grape juice is then blended with a spirit to raise the alcohol level to about 18 degrees then aged.

Ratafia has no fizz unlike champagne and is rich and loaded with sweetness and spice. The main characteristics of De Sousa Champagne are; *'Vieilles Vignes' or old-vine viticulture. *The vineyards are ploughed traditionally by horse and some of the oldest vines go back to the early 1930's. *Full malolactic fermentation. *Extended lees ageing. *Ageing of reserve wines in barrel. Ericks' winemaking philosophy supports later ripening which allows the vines to benefit from the mineral-rich soils. Egly-Ouriet (pronounced Egg-lee Ou-ri-yay) is based in the grand cru village of Ambonnay, famed for its pinot noir fruit. It is run by the skillful, Francis Egly who practices biodynamic and organic principals in his vineyards which span, Bouzy and Verzenay. Francis makes up a handful of highly talented and terroir-driven producers along with the likes of Anselme Selosse, Larmandier-Bernier and Vouette et Sorbée. These are wines first and he produces deep, powerful and intense styles of champagne. His minimum ageing is around 48-60 months (as declared on his informative back label) for his non-vintage wines, allowing time to express the inner strength and purity.
