The blend combines 30% macerated Meunier, 10% still red Meunier, and 60% white Meunier wine, with 40% of the white portion coming from reserve wines aged in barrel. Grapes are hand-picked at full ripeness and pressed traditionally. Alcoholic fermentation occurs in vats, foudres and barrels, followed by partial malolactic fermentation and ageing on fine lees for texture and depth. Disgorgement is performed by hand, highlighting the artisanal commitment to detail.
