The vibrant acidity and chalky mineral character of Les Grandes Crayères make it a beautiful match for fresh seafood and delicate dishes. Enjoy alongside freshly shucked oysters, scallop crudo, sashimi or lightly grilled white fish to complement its saline freshness. Its precision and subtle complexity also pair wonderfully with lobster, citrus-dressed seafood, goat's cheese or aged Comté. For a more indulgent pairing, try it with delicate seafood dishes finished with a light beurre blanc sauce.

Technical Notes

Crafted from 100% Chardonnay, Les Grandes Crayères 2019 is sourced from two exceptionally chalky Premier Cru vineyard parcels in Chavot, within the Coteaux Sud d'Épernay. The west-facing vineyards feature mass-selection vines over 40 years old, rooted in Campanian chalk beneath just 20cm of topsoil. The base wine is fermented with indigenous yeasts in seasoned oak barrels aged between three and ten years, with malolactic fermentation prevented to preserve freshness and precision. The champagne then spends approximately 30 months ageing on lees in bottle before being disgorged by hand, followed by a further nine months of rest before release. This 2019 vintage was disgorged in November 2022, with a dosage of 2.5 g/L.

What to Expect

Les Grandes Crayères 2019 is an exceptionally precise and mineral-driven Blanc de Blancs, showcasing the remarkable purity of Chardonnay grown on Champagne's ancient chalk soils. Bright, focused and vibrant, this champagne delivers beautiful tension and freshness, with delicate citrus, orchard fruit and subtle chalky notes. Its finely structured palate is supported by energetic acidity and a pronounced mineral backbone, creating a wine of impressive depth and elegance. The finish is long, refined and beautifully balanced, making this a sophisticated expression of Chardonnay with excellent ageing potential.
