Father and Vigneron Erick De Sousa has a Portuguese background and practices Biodynamic viticulture. The family runs just over 9 hectares, most of which in Avize but also in the Montagne de Reims and Ambonnay, also a small vineyard in the Marne Valley - Mardeuil. The main characteristics of De Sousa Champagne are; *'Vieilles Vignes' or old-vine viticulture. *The vineyards are ploughed traditionally by horse and some of the oldest vines go back to the early 1930's. *Full malolactic fermentation. *Extended lees ageing. *Ageing of reserve wines in barrel. Ericks' winemaking philosophy supports later ripening which allows the vines to benefit from the mineral-rich soils. This interaction enables the champagne to develop a palate profile that has abundance and purity and in our view, a remarkable length and finish compared to many other champagnes.

"}

They are located in the small village of Urville in the Côte des Bar where Pinot Noir, the predominant grape variety, finds its purest expression and allows the production of very elegant, aromatic wines. With an annual production of some 1.5 million bottles, they are considerably larger than a small grower, but not quite of the size of the Grande Marques in and around Reims and Epernay. Drappier is one of the foremost producers in the region which is highly respected amongst its peers like Cédric Bouchard, Marie-Courtin, Vouette et Sorbée, and Jacques Lassaigne. They own 55 hectares of vineyards and use another 50 hectares under contract with other growers. A an interesting historical fact is that Charles de Gaulle (the Former Minister of the Armed Forces in France) was very fond of their Champagne and they named a cuvée after him. Amongst their range of excellent cuvée’s, they have a range including a ‘Sulfur free’, ‘Zero dosage’, and a ‘blanc de blancs’ that contains a forgotten grape called Blanc Vrai.

Food suggestion

Perfect with grilled aniseed and lemon sea bass, risotto, sole à la plancha and traditional blanquette of veal.

["$100-200","chardonnay-dominant","Exclusive","Kyri's Selection","New Arrival","Organic","Region: Urville","Taste: Almond","Taste: Chardonnay Dominant","Taste: Ginger","Taste: Malolactic Fermention","Taste: No Filtration","Taste: Organic","Taste: Stainless Steel Fermentation","Taste: Stone Fruit","Year: 2012
"option1":"Single","option2":null,"option3":null
["Single
["//cdn.shopify.com/s/files/1/1922/1617/products/Drappier-Millesime-Exception-2012-Emperor-Champagne.jpg?v=1603342076
//cdn.shopify.com/s/files/1/1922/1617/products/Drappier-Millesime-Exception-2012-Emperor-Champagne.jpg?v=1603342076
Please select
https://cdn.shopify.com/s/files/1/1922/1617/products/Drappier-Millesime-Exception-2012-Emperor-Champagne.jpg?v=1603342076
https://cdn.shopify.com/s/files/1/1922/1617/products/Drappier-Millesime-Exception-2012-Emperor-Champagne.jpg?v=1603342076

- One of the oldest and most prominent houses in Champagne with little to no sulphur across the range

- Coming from the pristine 2012 harvest. Some houses focus on the pinot noir grape in their champagnes which provides big, round and powerful cuvées and some houses focus on chardonnay which provides more mineral drive, citrus and elegance. If you prefer the latter, then perhaps consider a bottle of Laurent-Perrier as your 'go-to' entertaining wine.

This maison has a serious history but over the last 100 years has had a long line of influential women at its helm (Mathilde Emilie Perrier in 1812 and later in 1938 Marie-Louise Lanson de Nonancourt), and we cannot help but think that this has influenced the style – graceful, elegant and sophisticated. Of the larger maisons in champagne this is more subtle and understated in its profile. Found in the small village of Festigny, the Apollonis estate owns 7 hectares of vines comprising 20 or so separate plots planted for the most part with pinot meunier (80%), some chardonnay (18%) and a little pinot noir (2%). The estate has been awarded the high environmental value (HVE) certificate, the highest award recognizing respect and care for the land, the environment and its biodiversity.

Festigny has relatively chalky soils for the Vallee de la Marne and the village itself lies in the warm valley, fully exposed to the sun. Within this valley is a solitary hill upon which the best vineyards of the village are located. With its steep slopes and a crown of trees on top, it is almost reminiscent of the hill of Corton in burgundy.

The majority of this domaine’s vineyards are found surrounding this hill, planted on steep slopes in clay rich in marl and limestone. This town is considered somewhat of an oddity, as it is primarily a chardonnay village amidst a mountain of Pinot noir. Why is this special? The Chardonnay used by Margaine in Villers Marmery is specific to this area and cannot be found anywhere else in Champagne. This immediately stands out as an identity that Arnaud wants to preserve which is present in the Margaine cuvées. His approach to making his champagne is to assess each year as it presents itself as opposed to a pre-determined recipe. Using a prescribed approach is restrictive to the true nature of the wine. He is a proponent of blocking malolactic fermentation, as he wants to preserve what he describes as ‘fruit freshness’ and not just acidity.
