The solera is now no more, bringing greater focus, more precise mineral articulation and greater emphasis on ripe fruit.

Dosage was sensibly dropped from 10-11g/L to 9.5 g/L. The result in 2010 is a wonderful accord between pretty lemon blossom, apple and pear fruit, the spicy, toasty, nutmeg allure of barrel-fermentation and bottle age, and the racy freshness of malic acidity. It's at once impeccably fresh and enticingly complex, with a long finish of soft chalk minerality."

Tyson Stelzer - The Champagne Guide 2016-2017
"}

So how did the name come about? Well this truly is an interesting story and through our research we discovered some interesting facts. The founders at first tried to create an acronym using their initials to form a name, which you can imagine was frustrating and ended nowhere. At a loss with what to do, the story goes, a very famous biscuit company called Huntley & Palmer, based in Berkshire, UK, inspired them. They were biscuit makers to the Royal family and received Royal warrants by Napoleon III. Philipponnat is a house of outstanding quality from their entry level Royale Reserve Brut all the way through to their iconic Clos des Goisses Vintages. Pol Roger is of the few champagne houses that have rightfully earned the British coat of arms to adorn every bottle and after all, it’s not just a favourite with the Royal Family but most of Britain, who know good champagne from the average. This medium-sized, family owned treasure of the Champagne region is the epitome of quality and consistency. With deep cool cellars, this maison leaves their cuvées ageing for far longer than most of their counterparts allowing the development of very fine and tiny bubbles. This creates a silky texture on the palate with subtle toasty notes that are the hallmark of excellent champagne. They called themselves 'Société des Grands Crus de la Champagne' because at the time, only growers that owned grand cru vineyards could join. Between them, they had grand cru vineyards in the areas of the Côte des Blancs and the Montagne de Reims and they banded together as they were seeking to make better wines than they could achieve separately. Apparently as many imports were restricted during the war back in the 1940's, the people of Reims or Remois as they are referred to were prepared to pay more for a packet of biscuits than a bottle of champagne! Billecart-Salmon (Pronounced beel-kahr sahl-moh) have a fresh, clean and elegant style. They champion the use of the meunier grape which is often added to other cuvees without fanfare in other houses. The absolutely pristine wine making facilities located in Mareuil-Sur-Aÿ are overseen by multiple generations of the family as well as chef winemaker Francois Domi. The house purposely ferments at a lower temperature elongating the ferment to weeks and not days as can be standard in champagne, which helps capture the pristine nature of the fruit.
