Father and Vigneron Erick De Sousa has a Portuguese background and practices Biodynamic viticulture. The family runs just over 9 hectares, most of which in Avize but also in the Montagne de Reims and Ambonnay, also a small vineyard in the Marne Valley - Mardeuil. The main characteristics of De Sousa Champagne are; *'Vieilles Vignes' or old-vine viticulture. *The vineyards are ploughed traditionally by horse and some of the oldest vines go back to the early 1930's. *Full malolactic fermentation. *Extended lees ageing. *Ageing of reserve wines in barrel. The vineyards are located in the true south of Champagne in the Cote de Bar and are meticulously governed by cult winemaker Bertrand Gautherot.\u003c\/p\u003e\n\u003cp\u003eGautherot, first and foremost makes a wine, the bubbles being incidental to what he is trying to achieve which is a wine that offers a sense of place. Almost all of the cuvees he produces are single vineyard (with the exception of Fidele) and single vintage. The wines have absolutely no dosage and are made at a lower bar of pressure resulting in finer bubbles and powerful vinous cuvees. Gautherots’ vineyards have been certified biodynamic since 1998 and his low yield, high intensity fruit translates to powerful wines that command food. Gautherot who was inspired by Jacques Selosse is one of the true legends of Champagne. The vineyards are located in the true south of Champagne in the Cote de Bar and are meticulously governed by cult winemaker Bertrand Gautherot.\u003c\/p\u003e\n\u003cp\u003eGautherot, first and foremost makes a wine, the bubbles being incidental to what he is trying to achieve which is a wine that offers a sense of place. Almost all of the cuvees he produces are single vineyard (with the exception of Fidele) and single vintage. The wines have absolutely no dosage and are made at a lower bar of pressure resulting in finer bubbles and powerful vinous cuvees. Gautherots’ vineyards have been certified biodynamic since 1998 and his low yield, high intensity fruit translates to powerful wines that command food. Gautherot who was inspired by Jacques Selosse is one of the true legends of Champagne. Producer Jerome Dehours is a member of the 'Les Artisans du Champagne', which brings together high quality, mostly single estate champagne producers for an annual tasting. Dehours is one of Champagne’s most exciting estates making stylish and expertly crafted wines with a careful approach and excellent quality. Apart from the renown of the vineyard work, Egly uses only 100% Grand Cru estate Pinot Noir fruit to make this! The fruit is also sorted and pressed gently and the finest of grape spirit is then immediately added. When you consider that most Ratafia comes from a Champagne producer's weakest fruit, you can begin to understand that we are not talking about a standard example of Ratafia.\u003c\/p\u003e\n\u003cp\u003eAs we have come to expect, this perfectionist grower refuses to aim for anything less than greatness and that is what we get here. It is run by the skillful, Francis Egly who practices biodynamic and organic principals in his vineyards which span, Bouzy and Verzenay. Francis makes up a handful of highly talented and terroir-driven producers along with the likes of Anselme Selosse, Larmandier-Bernier and Vouette et Sorbée. These are wines first and he produces deep, powerful and intense styles of champagne. His minimum ageing is around 48-60 months (as declared on his informative back label) for his non-vintage wines, allowing time to express the inner strength and purity. The fruit is also sorted and pressed gently and the finest of grape spirit is then immediately added. When you consider that most Ratafia comes from a Champagne producer's weakest fruit, you can begin to understand that we are not talking about a standard example of Ratafia.\u003c\/p\u003e\n\u003cp\u003eAs we have come to expect, this perfectionist grower refuses to aim for anything less than greatness and that is what we get here.
