As a result, everything in the region had to be replanted using American rootstock to fight the devastating bug. Everything except two Bollinger plots classified as Grands Crus: Chaudes Terres and Clos St-Jacques in Aÿ. Both plots are incredibly small: a total size of 0.36 hectares and are now the sole contributors to Bollinger Vieilles Vignes Françaises. Until recently, this exclusive cuvée was produced from three small plots including Croix Rouge, however this plot was lost to the phylloxera. Bollinger are well known for their dominance of the powerful and expressive pinot noir from Aÿ where they were founded, their use of magnums for production of all their wines and a traditional wine making style incorporating fermentation in oak barrels from which they have never deviated. They still have their own in-house cooper who makes and manages their stock of some 3,500 barrels! That equates to about 1 million bottles being fermented in barrel - that is the largest (along with Krug) of any other producer in the region. Currently Bollinger own some 164 hectares in some of the best sites across Champagne.

Technical details

Vineyards: 100% Grand Cru | Aÿ: Chaudes Terres & Clos St-Jacques
Grape Varieties: 100% Pinot Noir
Ageing: 8 years on the lees
Dosage: 4 g/l
Drink: Now to 2030

["50-60% reserve wines","Base Vintage: 2010","Kyri's Selection","Oak","Prestige","Prestige Collection","Prestige Cuvee","Rare","Rare Collection","Rare Collections","Rare Cuvee","Region: Aÿ","Taste: Aged 8 Years on Lees","Taste: Baked Apple","Taste: Barrel-maturation","Taste: Honey","Taste: Peach","Taste: Pinot Noir Dominant","Taste: Plum","Taste: Toasted Almond","Year: 2010
"option1":"Single","option2":null,"option3":null
[32345046515821
["Single
["//cdn.shopify.com/s/files/1/1922/1617/products/vieilles-vignes-francaises.jpg?v=1589429273
//cdn.shopify.com/s/files/1/1922/1617/products/vieilles-vignes-francaises.jpg?v=1589429273
Please select

This item comes from our private cellar. The Chaudes Terres and Clos St-Jacques vineyards are grown the traditional way following the provignage method, working the plot by hand and even sometimes with the help of a cart-horse.

Bollinger Vieilles Vignes Françaises has only been created as an individual cuvée since 1970 and is a symbol of a bygone era: a reminiscent, extraordinary and moving legacy.
