Blanc de Blancs - The fine mousse of delicate bubbles elegantly accompanies the glints of its golden colour. A pure intensity of dry fruits aromas, almonds and fresh hazelnuts mixed with those of white flesh fruits. The creamy sensation of the bubbles combines with buttered brioche and mineral aromas. It has a persistent finish with a fresh and elegant sweetness.
Rosé - A pale yet radiant pink colour adorned with warm glints of gold. This cuvée unveils a subtle aroma leading to an elegant, delicate bouquet of fine notes of red berries and zest of citrus fruits.Its special method of vinification gives this cuvée a light, elegant flavour, followed by a fresh finish with a taste of raspberry.
Brut Sous-Bois NV - A radiant yellow crystalline appearance with golden glints brought to life by a luminous stream of persistent, fine bubbles.There is a rich olfactory impact which is harmoniously expressed (dried fruits, fresh citrus and white flesh fruits) and coupled with finely buttered seductive notes. A burst of flavours (notes of grilled brioche and toffee) thanks to the distinguished power and maturity which is a mark of any great wine of Champagne.
One of the leading families of Champagne, this medium sized, high quality domain is one to be admired. Billecart-Salmon (Pronounced beel-kahr sahl-moh) have a fresh, clean and elegant style. They champion the use of the meunier grape which is often added to other cuvees without fanfare in other houses. The absolutely pristine wine making facilities located in Mareuil-Sur-Aÿ are overseen by multiple generations of the family as well as chef winemaker Francois Domi. The house purposely ferments at a lower temperature elongating the ferment to weeks and not days as can be standard in champagne, which helps capture the pristine nature of the fruit. Every step of the wine making process at the house is artful, right down to the precision of the dosage which is unique for every disgorgement conducted in batches.
Blanc de Blancs - 100% Chardonnay from Grand Cru vineyards in the Côte des Blancs, with between 33 and 40% reserve wines used. Vinification in stainless steel tanks. Partial malolactic fermentation and ageing on lees for 4-5 years. Dosage 8 g/L.
Rosé - A blend of 40% Chardonnay, 30% Pinot Noirs and 30% Pinot Meunier, with 40% reserve wines. Vinification in stainless steel tanks. Malolactic fermentation and ageing on lees for 36 months. Dosage 9g/L.
Brut Sous-Bois NV - Blend of Chardonnay, Pinot Noirs and Pinot Meunier in equal proportions, with a blend of 30-35% reserve wines. Vinification and ageing take place in oak casks at low temperatures. Partial malolactic fermentation and aged on lees for 6-7 years. Dosage 7g/L.
Blanc de Blancs - Enjoy with caviar, seafood or grilled fish.
Rosé - This cuvée is an ideal partner as an aperitif and can also accompany a dish of wild salmon or sushi. For dessert, it will add a sublime touch to red fruit flavours.
Brut Sous-Bois NV - Its strength of character and integrity make it an ideal accompaniment to poultry dishes or Girolle mushrooms.
