Unlike most Blanc de Blancs Marteaux Guillaume does not originate on soils that are known for their Chardonnay growth. Instead Le Métèque was grown on traditionally Pinot Meunier plots in Bonneil and Charly-sur-Marne (Vallée de la Marne).

Fine bubbles, a golden colour with slightly green reflections, a fine and mineral nose, aromas gourmet, powerful and fine citrus fruits will delicately fill your mouth. Clay-limestone soils and sand compounds bring it matter and body, while in finesse, without weighing it down.

Guided by a commitment to tradition and sustainability, Guillaume, the fifth-generation winemaker, transitioned the vineyards to organic and biodynamic practices, leading to the inaugural organic harvest in September 2022. 100% Chardonnay from Bonneil and Charly-sur-Marne, on clay-limestone and sand soils. Base year 2017, with 25% perpetual wine blend. No malolactic fermentation. Vinifaction in stainless steel tank and oak barrel (58%). Dosage 1 g/L. Aged 5 years on lees.

This complex Blanc de Blancs will sublimate a fish with butter sauce, white meat or creamed veal. It also goes very well with cheeses such as Comté aged 18 to 24 months.
