Bollinger are well known for their dominance of the powerful and expressive pinot noir from Aÿ where they were founded, their use of magnums for production of all their wines and a traditional wine making style incorporating fermentation in oak barrels from which they have never deviated. They still have their own in-house cooper who makes and manages their stock of some 3,500 barrels! That equates to about 1 million bottles being fermented in barrel - that is the largest (along with Krug) of any other producer in the region.

A champagne of great finesse and a beautiful freshness obtained after a long ageing process in the cellar. Laurent-Perrier’s style and personality are defined by its high proportion of Chardonnay. Purity, freshness and elegance – essential characteristics, expressed in this champagne – are a good introduction to the spirit of the House.

It is very rare for a grand marque champagne house to change its house style, being its non vintage cuvée, but that is exactly what Laurent Perrier have done. The house is renowned for its elegant chardonnay lead style but as of recently the brut has been replaced by 'La Cuvee' a new flagship cuvée for the maison.

The Maison says that this new cuvée allows them to 'dial up their style' which is all about elegance, freshness and purity. The number five selling champagne of the world has been reborn with better quality fruit, decreased dosage and longer ageing time in the cellar increasing its complexity and creaminess.

55% chardonnay in the blend offers the cuvee citrus notes and lemon zest with white florals filling our glass. Delightful toasty biscuity flavours are more prominent than ever in what is perhaps the best non-vintage wine ever produced by the house.

About the house

Quite often people do not realise why they like a certain champagne brand. Some houses focus on the pinot noir grape in their champagnes which provides big, round and powerful cuvées and some houses focus on chardonnay which provides more mineral drive, citrus and elegance. Billecart-Salmon (Pronounced beel-kahr sahl-moh) have a fresh, clean and elegant style. They champion the use of the meunier grape which is often added to other cuvées without fanfare in other houses. The absolutely pristine wine making facilities located in Mareuil-Sur-Aÿ are overseen by multiple generations of the family as well as chef winemaker Francois Domi. The house purposely ferments at a lower temperature elongating the ferment to weeks and not days as can be standard in champagne, which helps capture the pristine nature of the fruit. Every step of the wine making process at the house is artful, right down to the precision of the dosage which is unique for every disgorgement conducted in batches.

Food Pairing

My mind escapes to the sea, perhaps some squid ink pasta made a la marinara style to bring out all the mineral flavour. Producer Jerome Dehours is a member of the 'Les Artisans du Champagne', which brings together high quality, mostly single estate champagne producers for an annual tasting. Dehours is one of Champagne’s most exciting estates making stylish and expertly crafted wines with a careful approach and excellent quality. The vineyards are located in the well-regarded Grand Cru village of Bouzy and although the wine is 90% Pinot Noir, the Maison hold back the malolactic fermentation so you have a crisp spine of acidity driving through a voluminous, mouthfilling wine that is silky smooth on the palate. The champagne has been aged in the cellar for over 8 years, with more time in the bottle, so expect waves of brioche, apricot and apple tartin on the nose. This Paul Bara wine will impress even the fussiest of drinkers! It's a power house. I guarantee, one glass is never enough."

Kyla Kirkpatrick, The Champagne Dame
"}

The memory of Madame Le Brun, who owned the castle in 1845, is still alive today. The house Le Brun de Neuville inherits its name thanks to the action of the noble heiress of the Château de Bethon, Madame de Reviers, one of the founders of the House. The vineyard Le Brun de Neuville is spread over 150 hectares, of which the majority has been planted for over 30 years on the undulating slopes of the Sézannais. Its vineyard is planted predominantly in Chardonnay, which represents 88% of the total. The Pinot Noir accounts for 11% and the Meunier just 1% of the vines. Philipponnat is a house of outstanding quality from their entry level Royale Reserve Brut all the way through to their iconic Clos des Goisses vintages. This premium producer picks fruit with maximum ripeness and focus on pinot noir fruit with power. All this ripeness is balanced with a long, cool fermentation and some wines being blocked from malolactic fermentation whilst being fermented in oak barrels.
