The 10 hectares of land farmed by the Laherte family are biodynamic and organic with the exception of two parcels which are located further afield in the Cote de Blancs and the Valley De La Marne. One of our favourite products from the region is Ratafia – expensive for the category due to where it comes from but fabulously decadent in flavour.\u003c\/span\u003e\u003c\/p\u003e\n\u003ch2\u003e\u003cspan\u003eAbout The House\u003c\/span\u003e\u003c\/h2\u003e\n\u003cp\u003ePerhaps the smallest the vineyard in the region, but such a wonderful producer. This minuscule single plot of meunier is situated on a challenging 45 degree slope with a fortunate south facing aspect. The owners Julien and Stephanie produce a tiny 4 barrels of delightful biodynamic, 100% pinot meunier wine as well as a few bottles of Ratafia. We are incredibly privileged to have a small allocation of this rare stock. \u003c\/p\u003e\n\u003ch2\u003e\u003cspan\u003eHow Ratafia is made\u003c\/span\u003e\u003c\/h2\u003e\n\u003cmeta charset=\"utf-8\"\u003e\n\u003cp\u003e\u003cspan\u003eRatafia is made using the grape juice of the third or fourth press of the grapes that would be other wise considered waste. Most champagne houses only use the first press – the cuvee – of the grape juice and are forbidden from using the third press, known as Rebeche, and beyond. This grape juice is then blended with a spirit to raise the alcohol level to about 18 degrees then aged. \u003c\/span\u003e\u003cspan\u003e \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eRatafia has no fizz unlike champagne and is rich and loaded with sweetness and spice. The Ratafia from Chevreux-Bournazel is made in minuscule quantities and that is not surprising given that the entire estate is only 0.4 hectares! Expect candied cherry fruit, honey, nuts and mouth-filling deliciousness. This minuscule single plot of meunier is situated on a challenging 45 degree slope with a fortunate south facing aspect. The owners Julien and Stephanie produce a tiny 4 barrels of delightful biodynamic, 100% pinot meunier wine as well as a few bottles of Ratafia. We are incredibly privileged to have a small allocation of this rare stock. \u003c\/p\u003e\n\u003ch2\u003e\u003cspan\u003eHow Ratafia is made\u003c\/span\u003e\u003c\/h2\u003e\n\u003cmeta charset=\"utf-8\"\u003e\n\u003cp\u003e\u003cspan\u003eRatafia is made using the grape juice of the third or fourth press of the grapes that would be other wise considered waste. Most champagne houses only use the first press – the cuvee – of the grape juice and are forbidden from using the third press, known as Rebeche, and beyond. This grape juice is then blended with a spirit to raise the alcohol level to about 18 degrees then aged. \u003c\/span\u003e\u003cspan\u003e \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eRatafia has no fizz unlike champagne and is rich and loaded with sweetness and spice. The Ratafia from Chevreux-Bournazel is made in minuscule quantities and that is not surprising given that the entire estate is only 0.4 hectares! Here, four generations of the Heucq family have adopted an increasingly attentive and sustainable approach in their family vineyards and winery. The path to conversion to biodynamic viticulture fulfils an aim to reactivate microbial life in the soil to enhance terroir expression, and coincides with the construction of a new ecological cuverie with natural ventilation, collection of rainwater and self-sufficiency in solar electricity. Unusual in Champagne, the same facility also serves to house all the pickers, who are trained to be particularly discerning in what they harvest. Meunier is naturally the focus in this part of the world, though chardonnay and pinot play a significant role in most cuvées, too. Vinification is refreshingly intuitive, with each parcel fermented and aged separately in stainless steel tanks or used oak barrels from Meursault to suit, and malolactic fermentation encouraged or blocked selectively. Cuvées are aged long and dosages are low. Informative back labels declare crus, cépage and time on lees. For such a small estate, its huge portfolio of no fewer than 20 cuvées must be one of the most diverse in Champagne, with many labels comprising fewer than 1000 bottles. The finest cuvées of André Heucq epitomise just what can be achieved in lesser terroirs with sufficient determination and focus. The path to conversion to biodynamic viticulture fulfils an aim to reactivate microbial life in the soil to enhance terroir expression, and coincides with the construction of a new ecological cuverie with natural ventilation, collection of rainwater and self-sufficiency in solar electricity. Unusual in Champagne, the same facility also serves to house all the pickers, who are trained to be particularly discerning in what they harvest. Meunier is naturally the focus in this part of the world, though chardonnay and pinot play a significant role in most cuvées, too. Vinification is refreshingly intuitive, with each parcel fermented and aged separately in stainless steel tanks or used oak barrels from Meursault to suit, and malolactic fermentation encouraged or blocked selectively. Cuvées are aged long and dosages are low. Informative back labels declare crus, cépage and time on lees. For such a small estate, its huge portfolio of no fewer than 20 cuvées must be one of the most diverse in Champagne, with many labels comprising fewer than 1000 bottles.
