To the brothers Chiquet, they couldn’t quite accept a dumbing down of the wine to suit a style so instead, they decided to work with the best of that given year and change from making their ‘NV’ given the code ‘Cuvée No. 740 (base year: 2012)’ instead. The result is a wine that changes every year and reflects the best of their combined efforts and the offerings of Mother Nature. Cuvée No. 740 accounts for 90% of their production, which sits at 280,000 bottles.
