Champagne Waris-Hubert is an independent family-owned champagne producer based in Avize, a prestigious Grand Cru village in the Côte des Blancs — one of Champagne’s most respected sub-regions known especially for Chardonnay.
Family & History
The estate is run by Olivier Waris and his wife Stéphanie Hubert, representing the 4th (or 5th) generation of a long-standing winegrowing family in Champagne.
Although the family farmed grapes for generations, they started making their own Champagne relatively recently — with the first harvest and bottling in the late 1990s (first wine marketed around 2001).
Their three children (Blanche, Antonin, and Cyprien) are involved in the vineyards and harvest — underscoring the house’s multi-generational, family ethos.
Vineyards & Terroir
The estate totals around 18 hectares of vineyards spread across some of Champagne’s most valued terroirs:
Grand Cru villages like Avize, Chouilly, Cramant, Oger, Aÿ, plus Premier Cru and other character terroirs such as Grauves, Bisseuil, Barbonne-Fayel, Marfaux, Merrey-sur-Arce, and Monthelon.
The dominant grape is Chardonnay (~70%), with Pinot Noir (~20%) and Pinot Meunier (~10%), reflecting a Côte des Blancs heritage while also embracing broader expressions from other plots.
The estate has undergone organic conversion and achieved certified organic status from the 2023 vintage onward, aligning viticulture with sustainability.
Winemaking Philosophy
They focus on expressing individual terroirs, often vinifying vineyard parcels separately to preserve distinct characteristics before blending.
The house favors low-dosage and minimal intervention, letting minerality, purity, and finesse shine through.
Some wines see part of their fermentation or aging in large oak barrels, adding subtle texture while maintaining freshness.
