Their wines are aged secretly in extraordinary 19th-century chalk quarries, 18 metres beneath the earth, where bottles rest slowly in silence for a minimum of four years — and up to more than ten years for vintage cuvées. In this hushed underground world, chalk provides a natural equilibrium and imprints a distinctive texture and resonance into the wine, allowing each cuvée to reach what the house calls “vibrational maturity.”
