It is run by the skillful, Francis Egly who practices biodynamic and organic principals in his vineyards which span, Bouzy and Verzenay. Francis makes up a handful of highly talented and terroir-driven producers along with the likes of Anselme Selosse, Larmandier-Bernier and Vouette et Sorbée. These are wines first and he produces deep, powerful and intense styles of champagne. His minimum ageing is around 48-60 months (as declared on his informative back label) for his non-vintage wines, allowing time to express the inner strength and purity. However, there are some other products that are produced in the region which are rarely seen, not sold in commercial quantities and are rarely talked about by anyone other than the winemaker. One of our favourite products from the region is Ratafia – expensive for the category due to where it comes from but fabulously decadent in flavour. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eRatafia is made using the grape juice of the third or fourth press of the grapes that would be other wise considered waste. Most champagne houses only use the first press – the cuvee – of the grape juice and are forbidden from using the third press, known as Rebeche, and beyond. This grape juice is then blended with a spirit to raise the alcohol level to about 18 degrees then aged. \u003c\/span\u003e\u003cspan\u003e \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eRatafia has no fizz unlike champagne and is rich and loaded with sweetness and spice. The Ratafia from Chevreux-Bournazel is made in minuscule quantities and that is not surprising given that the entire estate is only 0.4 hectares! Expect candied cherry fruit, honey, nuts and mouth-filling deliciousness. The owners Julien and Stephanie produce a tiny 4 barrels of delightful biodynamic, 100% pinot meunier wine as well as a few bottles of Ratafia. However, there are some other products that are produced in the region which are rarely seen, not sold in commercial quantities and are rarely talked about by anyone other than the winemaker. One of our favourite products from the region is Ratafia – expensive for the category due to where it comes from but fabulously decadent in flavour. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eRatafia is made using the grape juice of the third or fourth press of the grapes that would be other wise considered waste. Most champagne houses only use the first press – the cuvee – of the grape juice and are forbidden from using the third press, known as Rebeche, and beyond. This grape juice is then blended with a spirit to raise the alcohol level to about 18 degrees then aged. \u003c\/span\u003e\u003cspan\u003e \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eRatafia has no fizz unlike champagne and is rich and loaded with sweetness and spice. The Ratafia from Chevreux-Bournazel is made in minuscule quantities and that is not surprising given that the entire estate is only 0.4 hectares! They are passionate about soil and farming organically, with no pesticides, to recreate biodiversity and strengthen soil structure, as well as the encouraging the old vines to dig deeper.
