Food Pairings

The freshness and precision of Cuvée Nude Millésime makes it a superb companion to elegant seafood dishes. Pair it with freshly shucked oysters, scallop tartare, sashimi, king prawns or grilled white fish with lemon. Its vibrant acidity and refined texture also complement creamy goats' cheese, citrus-driven salads and delicate poultry dishes, while the extended lees ageing allows it to stand up beautifully to lobster, seared scallops and lightly buttered shellfish.

What to Expect

Produced exclusively from the outstanding 2015 vintage, Cuvée Nude Millésime is crafted from an equal blend of Chardonnay and Pinot Noir grown in the Vallée de la Marne. Following traditional champagne production, the wine undergoes full malolactic fermentation before spending eight months maturing in stainless steel tanks to preserve freshness and purity. It is then aged on lees for four years, developing exceptional texture and complexity before being finished with a minimal dosage of just 2.5g/L, allowing the character of the vintage, fruit and terroir to take centre stage.

Brilliant and vibrant in the glass, the nose opens with inviting aromas of ripe yellow fruits, caramel, pear tart and toasted almond. The palate is fresh yet beautifully textured, revealing layers of white currant, ripe pear and grapefruit carried by a fine, creamy mousse. Extended lees ageing brings subtle pastry notes and silky richness, while the low dosage delivers a clean, dry finish with exceptional freshness, precision and balance. Elegant and expressive, this vintage champagne is a wonderful reflection of both the 2015 harvest and Philippe Dechelle's meticulous approach to winemaking.
