This cuvée has a beautifully ripe nose with an explosion of blackberries and has a gorgeously rich and ripe palate. A textured, mouth filling wine which has a layered and complex sensation on the front end. Salinity is present and a lovely cherry note is detected on the finish.

Gaspard Brochet exploded onto the Champagne scene with his first release in 2020 and continues to excite and surprise us with every wine since. Gaspard comes from a long line of Brochet families in the area and has taken over the family business that is ‘Vincent Brochet’ – a renowned producer in the area. Along with the existing lines, Gaspard has gone about producing his own wines that define him. His first release – a pure Pinot Noir from the vineyard of Le Mont Benoit, vinified in oak – was a a triumph of a first attempt and everything since has more than lived up to the hype. We would pair this dish with an Italian style saltimbocca with veal wrapped in prosciutto with sage and lemon. Serve with a pomegrante salad.
