They are located in the small village of Urville in the Côte des Bar where Pinot Noir, the predominant grape variety, finds its purest expression and allows the production of very elegant, aromatic wines. With an annual production of some 1.5 million bottles, they are considerably larger than a small grower, but not quite of the size of the Grande Marques in and around Reims and Epernay. Drappier is one of the foremost producers in the region which is highly respected amongst its peers like Cédric Bouchard, Marie-Courtin, Vouette et Sorbée, and Jacques Lassaigne. They own 55 hectares of vineyards and use another 50 hectares under contract with other growers. A an interesting historical fact is that Charles de Gaulle (the Former Minister of the Armed Forces in France) was very fond of their Champagne and they named a cuvée after him. Amongst their range of excellent cuvées, they have a range including a ‘Sulphur free’, ‘Zero dosage’, and a ‘Blanc de blancs’ that contains a forgotten grape called Blanc Vrai.\u003c\/span\u003e\u003c\/p\u003e\n\u003ch2\u003e\u003cstrong\u003eTechnical Notes\u003c\/strong\u003e\u003c\/h2\u003e\n\u003cp class=\"p1\"\u003eOnly the juices from first pressing – the cuvées - are used with mechanical low-pressure presses and use of gravity to avoid pumping, which avoids oxidisation. They are located in the small village of Urville in the Côte des Bar where Pinot Noir, the predominant grape variety, finds its purest expression and allows the production of very elegant, aromatic wines. With an annual production of some 1.5 million bottles, they are considerably larger than a small grower, but not quite of the size of the Grande Marques in and around Reims and Epernay. Drappier is one of the foremost producers in the region which is highly respected amongst its peers like Cédric Bouchard, Marie-Courtin, Vouette et Sorbée, and Jacques Lassaigne. They own 55 hectares of vineyards and use another 50 hectares under contract with other growers. A an interesting historical fact is that Charles de Gaulle (the Former Minister of the Armed Forces in France) was very fond of their Champagne and they named a cuvée after him. Pascal is dedicated to his vineyards - his viticultural methods are 100% organic and he uses late ripening like Egly Ouriet, Benoît Lahaye and Rémi Leroy to achieve full maturity in his fruit. He doesn't harvest less than 10.5 degrees of potential alcohol, very high for champagne – so there is never any need for chaptalisation or addition of sugar. \u003c\/p\u003e\n\u003cp\u003eThe winemaking is natural and non-interventionist with only native yeasts used for the primary ferment and bottling takes place with no filtration or fining. He does use malolactic fermentation and then the wine remains on lees for around five months, with one third of the production being aged in old oak barrels before the secondary ferment in bottle. They are located in the small village of Urville in the Côte des Bar where Pinot Noir, the predominant grape variety, finds its purest expression and allows the production of very elegant, aromatic wines. With an annual production of some 1.5 million bottles, they are considerably larger than a small grower, but not quite of the size of the Grande Marques in and around Reims and Epernay. Drappier is one of the foremost producers in the region which is highly respected amongst its peers like Cédric Bouchard, Marie-Courtin, Vouette et Sorbée, and Jacques Lassaigne. They own 55 hectares of vineyards and use another 50 hectares under contract with other growers. A an interesting historical fact is that Charles de Gaulle (the Former Minister of the Armed Forces in France) was very fond of their Champagne and they named a cuvée after him.
