Ayala La Perle 2015 is a vintage champagne from the Champagne house Ayala, known for its traditional winemaking methods and focus on aging potential. 

This extraordinary release from the maison is a blend of 80% Chardonnay and 20% Pinot Noir, sourced entirely from Grand Cru vineyards including Aÿ, Chouilly, Cramant, Le Mesnil-sur-Oger, and Oger. 

The wine undergoes extended aging (over 8 years) aged from the beginning under natural cork which must be  riddled by hand and disgorgement à la volée. 

Tasting Notes: 

 

This extra ordinary wine retains an elegant acid line but at the same time has developed and autolytic aromas of toasted bread, tobacco, hazelnut, dried flowers, and eucalyptus. Palate features candied citrus, cocoa, and dried fruits. 

This cuvee could be cellared for an additional 10 years.
