Pinot Noir–led (75% Pinot Noir, 25% Meunier), native yeast fermented, lees-aged for depth, and finished Extra Brut for a crisp, dry, terroir-led style. Expect redcurrant, pomegranate, savoury spice, almond, brioche, and a chalky mineral finish — seriously food-friendly.

Extra Brut
What to Expect

Expect bright red-fruit energy up front—redcurrant and pomegranate—layered with a subtle savoury spice. As it opens, you’ll find almond, brioche, and a chalky mineral edge coming through. The palate is structured and precise with a fine bead and firm acidity, finishing dry, clean, and seriously food-friendly.

Food Pairings

This is made for the table: try it with tuna crudo, roast quail, or a mushroom tart to play to its tension and savoury depth. Aged, nutty cheeses like Comté are a dream match, as are umami-driven dishes that aren’t overly rich. If you cellar it for a few years, it will gain extra softness and complexity, making it even better with roast poultry and earthy flavours.
