It is led by the indefatigable Godefroy Baijot, who is the Global Export Manager, and talented winemaker Cedric Thiebault. The most distinctive asset to this house is that all of their wines are made using low bar pressure. For those of you who may not have come across this, most champagne is made at 6 bar of pressure where as Besserat make it at 4.5 bar. How does this make the wines different? The good news is that there aren't any less bubbles, instead, the approach of the bubble on the palate is more delicate which makes them especially suited to pairing with food. Bollinger are well known for their dominance of the powerful and expressive pinot noir from Aÿ where they were founded, their use of magnums for production of all their wines and a traditional wine making style incorporating fermentation in oak barrels from which they have never deviated. They still have their own in-house cooper who makes and manages their stock of some 3,500 barrels! That equates to about 1 million bottles being fermented in barrel - that is the largest (along with Krug) of any other producer in the region. Currently Bollinger own some 164 hectares in some of the best sites across Champagne.

Technical details

Blend of the 2012 vintage: 65% Pinot Noir, 35% Chardonnay.
21 crus: mainly Aÿ and Verzenay for the Pinot Noir, Le Mesnil-sur-Oger and Oiry for the Chardonnay. We are thrilled to have a few of these gorgeous adornments available.

Made in the traditional saignee method, 48h to 72h skin contact only. This oozes class, elegance and one of the most important rosés of its time. This rose was first created by Bernard de Nonancourt in 1968 at a time when making rosé was considered fanciful and in our mind remains a go-to rosé when exploring champagne, especially when pairing with foods.

Lots of lively berry fruits, redcurrant and blood orange. The palate has a great balance between uplifting acidity, freshly picked fruit, like black cherry and a marked vinous character that makes this such an interesting style.This is 100% pinot noir from the best crus of Ambonnay, Bouzy, Louvois and Tours-Sur-Marne.

Serve around 8-10 degree celsius

About the house

Quite often people do not realise why they like a certain champagne brand. Some houses focus on the pinot noir grape in their champagnes which provides big, round and powerful cuvées and some houses focus on chardonnay which provides more mineral drive, citrus and elegance. If you prefer the latter, then perhaps consider a bottle of Laurent-Perrier as your 'go-to' entertaining wine.

This maison has a serious history but over the last 100 years has had a long line of influential women at its helm (Mathilde Emilie Perrier in 1812 and later in 1938 Marie-Louise Lanson de Nonancourt), and we cannot help but think that this has influenced the style – graceful, elegant and sophisticated. Of the larger maisons in champagne this is more subtle and understated in its profile. This may be to your preference and it is an affordable champagne label.

Food suggestion

Rosé is such a versatile style of wine especially when you have the added bonus of light tannin to add structure and aromatic profile. This can be paired with a plethora of dishes, including; tuna tartare; grilled prawns and an Italian-style salami or even duck prosciutto.
"}

For all of the exuberance that its bright, full straw-yellow hue anticipates, it delivers impressive accuracy and generosity of white peach and lingering spice. Well-balanced acidity and the soft, fine chalk minerality of the vineyard preserve admirable focus and poise." 94/100 - Tyson Stelzer

Technical details

Zero dosage; 100% Bouzy pinot noir

About the house

A winemaking family of more than 2 centuries, the founder was a printer in Louis XV's court of Versailles and the wines are cellared under the family’s 17th century village house. The style of the labels reflects their heritage.

Bouzy and Ambonnay are the epicentre of pinot noir in Champagne, and the Clouet family is the privileged custodian of eight hectares of estate vines in the best middle slopes of both villages. These are rich and concentrated expressions of pinot noir, wines of deep complexity, multifaceted interest and engaging character, yet with remarkable restraint and sense of control. Tasting after tasting confirm my impression that this small and relatively unknown grower ranks high among Champagne’s finest practitioners of pinot noir – and represents one of the best value of all.
"}
