The Augustin Ratafia is made from Pinot Noir and a blend of Marc de Champagne and Fine Champagne. It is considered to be the "little brother'' of our two saignée rosés.

Ripe sultana and raisins on the nose with gingerbread, rum and raisin. Exotic palate that’s packing some heat and spice. Would work well with Blue cheese or chocolate fondant.

The Augustin Ratafia is made from Pinot Noir and a blend of Marc de Champagne (brandy obtained from the residue of grape pressing, also called "eau de vie") and Fine Champagne (brandy made from at least 50% Grand Champagne and the rest Petite Champagne). The must was macerated for two more days, which gives it the lovely ruby red colour. Aged in oak barrels and is unfiltered.

Domaine Augustin is a family business, run today by Marc and Emmanuelle Augustin. Together they farm nine hectares of Premier Cru vineyards in the communes of Avenay Val D’or on the Montagne de Reims and Vertus in the Côte des Blancs.

Marc found himself with a land that was 'alive' resulting from the organic management of his father Jean, who courageously rejected man-made chemicals from the beginning.

They conveted to biodynamic viticulture in 2011 and are certified Demeter. In the winery they use a combination of wood, amphorae and concrete containers for the first fermentations and aging of the vins clairs. The first ferments are often wild and take place spontaneously and for the second fermentation in bottles we use the fine lees stored in a carboy - which is a large globular glass bottle with a narrow neck, dynamized before inoculation with raw sugar from biodynamic agriculture.

An absolute favourite of ours and perfect to enjoy as an aperitif or digestive. Try berry based desserts, cheery pie, cheesecake with blueberry top or perhaps an almond tart? Ratafia is friendly with cheese as well.
