Devaux Coeur de Nature

Literally translated to Heart of Nature, Coeur de Nature is the first certified 100% organic cuvée from Champagne Devaux. It is the result of a demanding environmental approach that has been in place for several decades in the heart of the vineyards of the Côte des Bar of Champagne Devaux.

With a very fresh nose, reminiscent of biscuits, it delivers a beautiful maturity with aromas of bergamot, dried apricots and dried flowers. The attack on the palate is invigorating and slightly saline. Coeur de Nature is a crunchy, delicious wine, reminiscent of very ripe flesh like the Anjou pear, with notes of white flowers.

Devaux suggests enjoying Coeur de Nature with stuffed goose, sweetbreads, foie gras, scallops, monkfish cheek, sea bass, turbot in a salt crust and Chaource.

Founded in 1846 by brothers Jules and Auguste Devaux, the house was then managed by three inspiring women who led the family winery with remarkable energy and talent in equal measure. Devaux is located in a village known as Hameau de Villeneuve the far south of Champagne in an area known as the Côte des Bar, where big luscious pinot noir fruit is the hero. Approximately 100 hectares of their huge land holding is dedicated to making the house champagne of Devaux, with the remaining fruit sold to other producers.
