Champagne M. Marcoult Ratafia Rosé

Rich, velvety and intensely aromatic, the Ratafia Rosé from Champagne M. Marcoult is a beautifully indulgent expression of Champagne tradition. Expect layers of cooked plum, cherry liqueur, candied fruits and honeyed spice, balanced by a smooth, warming finish. The Pinot Noir base gives the ratafia its naturally deep amaranth rosé hue, while extended oak ageing adds softness, texture and depth. Unfiltered and crafted with minimal intervention, this is a decadent aperitif or digestif designed for slow sipping and memorable moments.

This richly textured ratafia shines alongside both sweet and savoury dishes. Pair it with matured cheeses like Époisses, fine dry charcuterie or slow-cooked beef for a luxurious savoury experience. On the sweeter side, it’s exceptional with dark chocolate desserts, Black Forest cake or poached fruits. It also works beautifully as an after-dinner digestif served slightly chilled, or even incorporated into sauces and reductions for added depth and complexity.

Crafted from a blend of Fine de la Marne and concentrated grape juice, this Ratafia Rosé is based on Pinot Noir and aged in oak barrels for a minimum of 24 months. The Fine de la Marne is traditionally distilled over a wood fire using an iron still, carefully selecting only the “heart” of the distillation for purity and aromatic complexity. The grape juice used comes from the final pressing of the grapes — known as rebêche — contributing richness, texture and concentration. Unfiltered and naturally cold stabilised, a light sediment may appear over time without affecting quality.

Champagne M. Marcoult is a small grower-producer based in Barbonne-Fayel in the Côte de Sézanne, where Florence and Julien Marcoult focus on expressive, terroir-driven wines that honour traditional Champagne craftsmanship. Their ratafia is produced in collaboration with a local village distiller using Fine de la Marne distilled from the domaine’s own wines in a historic wood-fired still dating back to 1951. Combining heritage techniques with a deeply artisanal approach, M. Marcoult creates wines and liqueurs that are authentic, characterful and unmistakably Champagne.
