The fruit sourced for Salon comes from approximately 19 cru (or vineyard plots) from the grand cru village of Les Mesnil Sur Oger. This village is considered by growers as 'the serious one' in terms of fruit expression and the champagne definitely needs time in the cellar to show its true colours. For a wine that is aged for a minimum of 10 years prior to release with no malo and 100% stainless steel, it's as pure, fresh and chalk-driven as a young wine.
