Welcome to the South's expression of single-vineyard pinot noir, akin to many expressions in Burgundy. Papillon means butterfly.
Expect notes of ripe blood orange, baked apple, peach and red fruits. Straightforward and to-the-point this is a tantalizing style of champagne with a creamy texture. Excellent length with a clear, mineral finish.
This vineyard is based on Clay-Limestone with a majority of red clay. Papillon is a sélection massale planting of Pinot Noir at the bottom of the hill with south/ southwest exposure. 'Massale' means to select the best performing vines and replant to maintain the quality of that parcel.
Aged in both stainless steel vats and in oak barrels as a wine. Then aged between 18 to 20 months on it's yeast lees in bottle. Zero sulphur and disgorged a la volée (by hand) with no sugar addition. Brut nature.
