Created as a tribute to Louise Pommery, this prestige cuvée is made to express the purity of fruit from selected plots in AvizanCramant for Chardonnay and Aÿ for PinoNoir.

Dedicatepickers green harvest, and then pick only the ripest grapes meaning the yield is half the size of neighbouring land. Only the heart of the pressed juice is used, and once blended the wine goes into the cellars for a minimum of 10 years. No dosage is added in order to let the fruit shine through without the veil of sugar.

This makes for a sensational champagne with incredibly fine perlage, vivid aromas of plum, frangipani and flaky hazelnut croissants, and beautiful persistence.

On the eye: Yellow shades and slightly green reflections. On the nose: notes of slightly dried lemon, white flowers, all with a very nice minerality and good freshness. On the palate: its final is very direct and the finish in the mouth leaves a memory of a very subtle wine.

One of the Grand Marques of Champagne and rightly so. Madame Louise Pommery took over the small family vineyard at a young age after the unfortunate passing of her husband left her with a young child and an even more immature business in the Pommery & Greno Estate. Louise was an early #GirlPower pioneer, not only because she ran a business at a time when men dominated just about everything, but because she came up with a number of groundbreaking ideas, including storing wines in temperature controlled caves and producing the first Brut (dry) Champagne. When she passed at 71 years, she was the first woman to be given a state funeral in France.

The Cuvée Louise is the perfeccompanioforefinedishelika salmon and lobster wellington, truffle feuilleté anwhnosofpouncakfroBrittany.
