Created as a tribute to Louise Pommery, this prestige cuvee is made to express the purity of fruit from selected plots in Avize and Cramant for Chardonnay and Ay for Pinot Noir. Dedicated pickers green harvest, and then pick only the ripest grapes meaning the yeild is half the size of neighbouring land. Only the heart of the pressed juice is used, and once blended the wine goes into the cellars for a minimum of 10 years. No dosage is added to this limited edition wine (less than 30,000 bottles made), to let the fruit shine through without the veil of sugar.
This makes for a sensational champagne with incredibly fine perlage, vivid aromas of plum, frangipani and flaky hazelnut croissants, and beautiful persistance.
