What to expect


"The 2013 Les Maillerettes Bouzy Grand Cru Blanc de Noirs Extra-Brut (disgorged in July 2018 with a dosage of 1.8 grams per litre) offers a picture-book flavour of Bouzy pinot noir: sweet cherries, great purity and elegant intensity. Full-bodied, round and fruity on the palate, but pure, fresh and precise, this is a superb pinot with great elegance and length. Lovely salinity. Aged in 100% stainless steel. This is a fascinating Bouzy Champagne."

"The Blanc de Noirs is a 100% pinot noir from a single vineyard of 0.8 hectares called “Les Maillerettes” planted in 1970. This wine is vivacious, showing both the elegance and personality of the pinot noir. On the palate, this champagne is delicate and very fine showing aromas of citrus and notes of small red fruit berries. This is classed as 'Extra Brut' at only 2.6 grams per litre dosage. Only 2,500 bottles produced each year."

Food Suggestion

Welcome to the new generation of the family grower. Brothers Quinton and Antoine Paillard add a cool factor to champagne and are doing a great job. Slick new labels are just a hint to the progressive minds of these new generation wine makers. The wines zoom in on the Bouzy terroir that their vineyards are planted in (yes this is really a Champagne village!). This is a grand cru region famed for big bold pinot noir grapes with power and drive and it presents in most wines created by the maison but the wines are not tempered by dosage. Under the careful watch of father Pierre Paillard, the champagnes from this family owned estate are direct and straight from vine to wine. The Paillard family owns 60% pinot noir and 40% chardonnay grapes, blending pinot noir oriented champagnes and only utilising the ‘noble grape’ varieties. With a staunchly organic and natural approach to their wine making, these are connoisseurs' wines and are strictly on allocation.

Food Suggestion


Being quite a powerful style of Blanc de Noirs yet with fine acidity and mineral tension, it would stand up to some gamey flavours. A recipe for roast rabbit with bacon and juniper berries was bought to our attention and we believe it would work a treat. Rare roast beef with roasted beetroot would also sidle up well.
