This exciting family estate is located in the south of Champagne in the small village of Chavot - a village that rarely receives fan-fare but it has a worthy grower producing fascinating cuvees in its midst. The 10 hectares of land farmed by the Laherte family are biodynamic and organic with the exception of two parcels which are located further afield in the Cote de Blancs and the Valley De La Marne. Aurèlien is the youngest generation of the house and is an impressive young winemaker who is working in great partnership.

A blend of three grapes: 60% Pinot Meunier, 30% Chardonnay and 10% Pinot Noir, with 40% of reserve wines from previous vintages which have been aged in barrels on lees.

The vines are around 30 years old and have been growing with respect to nature, influenced by ecological methods for some time. The grapes are picked by hand when they have fully ripened and undergo a traditional press. Alcoholic fermentation is conducted in steel vats, foudres and barrels. Partial malolactic fermentation. Dosage 4.5 g/L.

Wonderful as an apéritif, or paired with oysters and other shellfish.
