Food Pairing 

Jean Velut is a small producer located in the village of Montgeux. Montegeux is situated in the south of champagne but not as far south as the Cote des Bar. The region is famed for it’s unusual composition of soil found nowhere else in champagne which is mainly concentrated chalk with Silex that is a flint and a sand based soil type that is a formed from a mixture of clay, limestone and silica.   Montgueux and it has long been famed for it’s chardonnay and is known as the mini Montrachet of the Cotes des Bars. Montrachet if you don’t know is a Grand Cru appellation in the Cote de Beaune subregion of Burgundy. The wines from this region are quite simply sublime. The growers here are Denis and Anne Velut who belief in organic viticulture on this small 7.7-hectare estate with no use fertilisers or insecticides.

Whole roasted snapper baked with lemon wedges, thyme, sage and roast potatoes.
