"Huré’s primary vintage cuvée is called Instantanée, made in every vintage since 1995. Its varietal composition changes according to the conditions of each vintage, as it’s intended to be a snapshot of that year, and it typically comes from a selection of vineyards in Ludes that always yield highly concentrated wines." Aged between 5-6 years on lees which adds layers of toast, roast almond with a nougat. Good wines should always want you reaching for another glass and this does just that. Enjoy a vintage champagne from a great year.

Technical details: 30% meunier 35% pinot noir with 35% chardonnay. Reserve wines are at around 35% with 5 years on lees plus another year in bottle. Being Extra Brut this has 4 g/l dosage (addition of sugar). Blended from the three champagne varietals grown in Ludes, Villedommange, Rilly La Montagne and Brouillet, this cuvée ages six years in our cellars.

On the northern of the Montagne de Reims in Ludes, Francois Huré and his brother, Pierre, run their family estate of Huré Frères, cultivating about 26 acres (10 hectares) of vines. Most of the vineyard work is organic and parcels are vinified separately to preserve their characters. Huré's champagnes combine rich texture with racy acidity, as demonstrated by the nonvintage Invitation, made mostly of pinot noir and meunier.

With the Extra layers coming from the lees and the generous soft palate, a warm mushroom tart with creme fraiche would be a winning combination. Vintage champagne a aged hard cheese like Comte or Gouda work a treat too.
