Lifted citrus, some chalkiness and yellow plum with some florals on the nose. Palate is clean, juicy acids with fresh orange citrus flesh and bright acid profile. We like the selection of fruit from the 10 different vineyard parcels, it gives character and sets an easy-going style of blanc de blancs. A great example and one worth seeking out.

An important note about this house is that they only make vintage champagne of which only two other champagne houses; Salon and Dom Perignon make wine in this way. An exciting house to watch and brand new in Australia.

HATT et SÖNER is a champagne house located in the Côte des Blancs and is the first Swedish-owned champagne house. The history of the house dates back to 1865 when the Vallois family planted it’s first vines. Around the same time, the Ruscon family (from Sweden) were entranced into the wine trade, however it was not until 1982 that the two families came together. It wasn't until almost 30 years later that the Vallois family, Ruscon family, and two other Swedish families decided to create a new maison with a new vision and so HATT et SÖNER was born. The word Hatt is Swedish for 'Hat' and Söner for 'Sons'. In the 19th century, The Ruscon family owned hat factories which supplied to fashion houses in Paris. HATT et SÖNER uses only chardonnay derived from both grand and premier cru vineyards located in Oger, Le Mesnil-sur-Oger, Vertus and Bergères-les-Vertus. Chardonnay brings finesse, elegance and freshness to champagne and the terroir of chalk and mineral reflect so perfectly in the HATT et SÖNER range. All the wines are vintage with the majority not going through malolactic fermentation. These are wines that can be stashed away in your cellar for at least 10-15 years.

We served this champagne with a dish prepared by Urbane Head Chef Josh Raine - seared scallops with broccoli, avocado and crispy shallot with lime and coconut dressing.
