We welcome the latest bottling from Guiborat et Fils - Tethys.17. It is named after the Greek Goddess of the Sea and refers to the ancient sea from the Mesozoic era that covered what is now Champagne. This is made from Guiborat’s younger vines (between 10- 30 years old). We love that it is crafted with minimal intervention and handling where they use gravity to process into concrete or steel for fermentation.

 

A fifth-generation winegrower, Richard Fouquet has been making the wines at this Cramant estate since 1996. His great-great-grandfather founded the estate in 1885, and his maternal grandmother was instrumental in shaping the property as it exists today: after losing her husband at just 33 years of age, she took charge of the business herself, eventually doubling the size of the estate’s vineyards. Upon her retirement in 1985, the family’s vines were rented out until Fouquet took over a decade later.
