What to expect

"The 2008 Brut Cuvée Empreinte is striking. Rich, nuanced and incredibly inviting, the 2008 possesses striking mid-palate sweetness and silkiness, with expressive red stone fruit, spice, licorice and floral notes that are woven together effortlessly. This is an especially open 2008 that can be enjoyed young, as its balance is impeccable. The Empreinte, one of the house's signature wines, is a blend of Pinot Meunier, Pinot Noir and Chardonnay, all from Cumières. Dosage is 6 grams/litre."

Food suggestion

One of the more interesting producers of Champagne, Geoffroy makes bubbles worth talking about. Taking over the reigns of this father Rene, Jean-Baptiste is a talented and passionate wine producer and his fanatical efforts in the vineyard followed by careful craftsmanship in the cellar have made him one of the most revered winemakers in the region. Geoffroy is located in the grand cru region of Aÿ but the vineyards are located in Cumières which is where the vineyard was located up until recently. Red fruit rules here in a wine making style which is as close to biodynamic as possible without committing to the rigors of certification. Champagnes that reflect a sense of place with real character and personality are what Geoffroy is known for. We love this producer.

Our initial thoughts are with poultry and game. To focus in closer, perhaps either roast turkey or pigeon served with cranberry sauce and roasted potatoes and rosemary. This will tie in with the earthy, mineral aspect of the wine, coupled with the pure and expressive red fruit.
