What to expect

If you are keen on pinot-dominant champagnes, this will surprise you as it's not what you'd expect. On the flipside, if you love chardonnay-dominant champagne's this is a champagne you should definitely try as it will change your view 100% pinot noir.

The nose is lifted, elegant with red apple, lime blossom, cream and a slightly flinty-mineral note. There is delicate acidity, clean mineral presence (think of licking a wet stone perhaps, this is not exact science but it gives an indication of what mineral can taste like), a liveliness and youthfulness to the palate. There is a pronounced pink grapefruit character with a fine, clean finish.

  • This 100% pinot noir
  • Organic approach to farming (although not certified)
  • 30% reserve wines and the base wine is 2014
  • 20% of the wine has been in 5 year old barrels
  • 20 months on lees
  • 7 g/l residual sugar
$95.00

Club Price $90.25 (?)

Food suggestion

Who is Savart? Savart is an exciting champagne house based in Eceuil along the Marne Valley, that focuses on making expressive, organically-managed and terroir-driven champagne. They own just 4 hectares of land (1 of which is in neighbouring village of Villiers-aux-Noeuds) most of which is pinot noir and they craft a small quantity of high quality champagne each year. We are very fortunate in Australia to have access to this small allocation and our proud to have it available for all the champagne lovers out there.  Having taken over from his father Daniel in 2005, Frédéric Savart has been focussed on the vineyards and improving their health. The results show in the wines - they are crystal clear expressions of both soil and grape variety, offering aromatic complexity along with mineral freshness. Texturally graceful and full of life, these are gastronomic champagnes of the highest order.

Food suggestion

On our travels to champagne we came across a Sea bass tartare with cucumber, radish and parsnip puree if you're feeling fancy. You could also do a simple piece of grilled fish with avocado and citrus.
