This is 100% pinot noir blended from the 2008 and 2009 vintage. The fruit is sourced from the family Biodynamic vineyards of between 20 and 25 years of age and the grapes go into a traditional Coquard champagne press (pictured).
For the winemaking component all the must is fermented in enamel tanks and then bottled for secondary fermentation. Jean-Sebastien also uses aged wines for blending which are all stored in oak casks for complexity.
The result is a swathe of dark fruit, notably black cherry, red fig and blood orange. With some time in the glass it opens up to some roasted almond and spice with the palate showing freshness and lift from the clean acids and vibrant fruit. There is great balance in this wine with a long-lasting finish that goes on and on.
