What to expect


The nose has bright lemon and crushed rock with subtle notes of violet. Being a low dosage wine (2 g/l) their is great purity to the fruit which used to be 95% chardonnay with 5% pinot noir, however now it is 100% chardonnay mostly from Grauves. This puts the wine making in the spotlight showing all the hard work and effort into making this highly drinkable. Acidity is the hero here carrying that Avize chalk and partnered with crunchy green apple and lemon zest. There is no need to think too hard about this. Just relax in the sun with a few bottles and treat some friends to L'Echappee Belle - 'The Beautiful Escape' - Santé.

Food Suggestion

Etienne Calsac, definitely a young gun of champagne making pure, expressive champagne. He took over the family estate in 2008 and has converted to fully Biodynamic farming. He makes very small quantities of this about 3,500 bottles worldwide and owns a total of 2.8-odd hectares. He is also fortunate to have access to the monopole Clos des Maladreries in Avize with extremely limited bottling.  Interesting to know, Etienne's wines are extremely popular in Paris and have been listed at several Michelin-starred restaurant as well as the Ritz Hotel.
