Champagne Clarevallis, which has Ecocert certification, is made from grapes grown on Jurassic limestone land that is farmed organically and tilled, in part, by horse.

This cuvée is an extra-brut champagne, Pinot Noir dominant (75%) with the rest made of Chardonnay (10%), Pinot Meunier (10%) and Blanc Vrai (also called Pinot Blanc, 5%). The grapes are selected from the 16 hectare organically certified vineyard. Clarevallis is unfiltered and has very low sulphites.

Clarevallis is characterised by a golden-grey colour with hints of elderberry and violet in its taste. Fragrant aromatics with orange blossom coming from the Pinot Blanc, notes of lime and white flower. A dry wine with amazing structure. 

The name Clarevallis has many centuries of history behind it, since it is the name given by Saint-Bernard to the abbey he founded in 1115. This name ultimately evolved into Clairvaux. Champagne Drappier’s wines have been vinified and aged in cellars built in 1152 by monks from the Clairvaux abbey.

Champagne Drappier describes Clarevallis as “the expression and reflection of both the landscape and the land that men and women have been tending here since the 12th century.

Since 1808 the Drappier family has used its skill to select parcels of land, which are particularly well exposed and extremely rich in limestone. They are located in the small village of Urville in the Côte des Bar where Pinot Noir, the predominant grape variety, finds its purest expression and allows the production of very elegant, aromatic wines. With an annual production of some 1.5 million bottles, they are considerably larger than a small grower, but not quite of the size of the Grande Marques in and around Reims and Epernay. Drappier is one of the foremost producers in the region which is highly respected amongst its peers like Cédric Bouchard, Marie-Courtin, Vouette et Sorbée, and Jacques Lassaigne. They own 55 hectares of vineyards and use another 50 hectares under contract with other growers. A an interesting historical fact is that Charles de Gaulle (President of France 1959-1969, leader of the Free French Forces during WW2) was very fond of their Champagne and they named a cuvée after him. Amongst their range of excellent cuvée’s, they have a range including a sulfur free ("Sans Souffre"), a ‘Zero dosage’, and a ‘Blanc de blancs’ that contains a forgotten grape called Blanc Vrai.
