Tasting Dom Pérignon Plénitude 2 is an unforgettable experience. For each vintage and from its inception, a limited number of bottles are set aside in the cellars, predestined for longer maturation. With this extra time, the inner activity in the bottle increases. The yeast transfers its energy to the wine... a mysterious transfer of life. 

Plénitude 2 is the second life of Dom Pérignon, patiently brought to a new elevation and set on a path to eternity. After close to 15 years of slow transformation in the cellars, Dom Pérignon expands its energy and rises to an apex of essential, radiant vitality, in its state of Plénitude. Elevated to new heights, it unfurls across every dimensions – wider, deeper, longer, more intense - and gifted further with an extended longevity.

Dom Pérignon Vintage 2002 Plénitude 2 expresses confident, enhanced maturity. The assertive character of this wine now gives it genuine and authentic power; a delicate complexity woven through with freshness and minerality, coming together in a light texture. It conjures up pale gold, enhanced with the energy of light: radiant gold.

The nose - Its complexity starts out warm, golden, shimmering, with eastern exoticism: crystallised fruits, frangipane, sweet spices, fresh coriander. On the first nose, saffron is greyer and more saline, with the bouquet slowly becoming complex and then more austere, mysterious, clean and soothing.

The palate - The flavour instantly unfurls leaving a bright, expressive, delicate aftertaste that is lively yet sensual, and still very fruit-forward. The nose and palate are strikingly similar, and the velvety mouth-feel becomes deeper and richer. The overall result displays intense, elegant, saline and slight liquorice notes.

 

This iconic house posses the name of the man who is believed to be the god father of Champagne. Lead by enigmatic winemaker Richard Geoffroy, he has continued to prove that he is a force to be reckoned with and has been turning out great vintages and even far more superlative second release cuvees in the P2 range.  Geoffroy believes that champagnes age in plenitudes. This super talented winemaker has a theory that champagnes in the wine-makers cellars head off on a period of change and development then reach a plateau before heading off on another journey of increased complexity and development. As such, great vintages of Dom Perignon are held back in the cellar with the yeast inside the bottle to allow the wine to take on another stratosphere of complexity and depth. Enter P2 - a wine that must be enjoyed at least once in your lifetime and more if you can justify it!   

We would first recommend having this wine on its own without cuisine. It is a fascinating wine of considerable depth, layers and complexity. Please do not serve this wine in a narrow flute, it must be in an Emperor Champagne Tulip or a white wine glass. After you have slowly enjoyed a glass you could add cuisine to the experience. We are in caviar country, the house suggests "fried artichokes, sea bass, peach salad and Kombu; grilled potato chips, milk foam and caviar."
