- Certified Organic grower from the Côte des Bar in the South of Champagne

- Juicy, textured and upfront style of champagne for you natural wine lovers

- Pair with Crab Dumplings with steamed greens with oyster sauce

For this year Charles Dufour has purchased the grapes from his mother Francoise Martinot and named it 'Bistrotage' - the name was designed to identify even more of a gastronomic champagne

Cuvée B13 is made of 100% pinot noir grapes, originating from a limestone clay soil of the Upper Jurassic, originating from the Vallée de l'Arce in Côte de Bar.

Add oak ageing and 3-4 years on lees with no sulphur or sugar addition post disgorgement and the result is a wild array of apricots. toasted almonds and hazelnut. After some time in the glass, this evolved into ripe stone fruits with tropical notes.

Expect a bold structure with palpable texture and some salinity coming through. This is definitely a food wine.

Technical details

The grapes used are mainly from the 2013 harvest with the addition of reserve wines from 2011 and 2010. The same winemaking for all was made with indigenous yeasts half in stainless steel tanks and half in burgundy barrels. It was aged for 12 months on lees and a further two months in bottle. Disgorging without dosage or the addition of sulphur.

Charles Dufour is an considered one of the most important figures for organic champagne production. He is a vigneron from Côte des Bar in the village of Landreville.

Charles Dufour is a wine grower representing a new generation of small vignerons. He started producing high quality Champagne in 2006 in the family business, then he decided to convert to organic agriculture, conversion completed with the harvesting in 2010.  All grapes for his new line Charles Dufour - Les Vignes du 7 are now strictly certified. Charles' purist choice is not limited to the elimination of chemicals in the field, it also affects the vinification process, even though it is a very complicated one for Champagne. This is Charles Dufour's recipe for an authentic Champagne, able to reflect the terroir of the Côte with a round taste, before being successful Champagnes
