For this year Charles Dufour has purchased the grapes from his mother Francoise Martinot and named it 'Bistrotage' - the name was designed to identify even more of a gastronomic champagne
Cuvée B13 is made of 100% pinot noir grapes, originating from a limestone clay soil of the Upper Jurassic, originating from the Vallée de l'Arce in Côte de Bar.
Add oak ageing and 3-4 years on lees with no sulphur or sugar addition post disgorgement and the result is a wild array of apricots. toasted almonds and hazelnut. After some time in the glass, this evolved into ripe stone fruits with tropical notes.
Expect a bold structure with palpable texture and some salinity coming through. This is definitely a food wine.
The grapes used are mainly from the 2013 harvest with the addition of reserve wines from 2011 and 2010. The same winemaking for all was made with indigenous yeasts half in stainless steel tanks and half in burgundy barrels. It was aged for 12 months on lees and a further two months in bottle. Disgorging without dosage or the addition of sulphur.
