The dosage sits at just 4 g/l and provides a clear vision into the winemaking and purity of the fruit. All the fruit is was hand-selected with ageing on lees for a minimum of 4 years. Yellow fruits warm the palate with a distinct biscuity character underlying a very clean and juicy finish.

Champagne Charles Collin was founded in 1952 in the heart of the Côte des Bar region and represents over 140 grape growers with 330 hectares of vines, making them one of the largest producers in the region. Based across two sites in Fontette and Essoyes, which is coincidentally also the home of the famous impressionist Auguste Renoir. They produce an excellent range of champagne at their state-of-the-art facility, from their award-winning Brut right through to their Prestige Cuvée – Cuvée Charles, in honour of their founder Charles Collin who was the man behind the grower vision back in the early 50’s.Over 90% of the vineyards are planted with Pinot noir, the remainder being planted with chardonnay. This is reflected in the range with the wines showing purity, expression and finesse. They are a young and dynamic team led by the talented winemaker Guillaume Cartier.

We like the idea of chinese influenced Duck, be it Peking or Pancakes. A recent discovery with more mineral driven wines is the humble radish. There are some amazing radish salad recipes that would heighten some of the flavours in this wine.
