- A reference point for forgotten varieties in champagne
- A definite dinner party conversation starter
- Pair with Seared scallops with fresh lime and cucumber
Bright citrus, almond, lifted florals and definite mineral, wet stone character. The palate structure is underlined by the pinots here which fills the mouth and gives definition. This is is still super clean and fresh with naturally low dosage. Get involved and try Aubrys' beautifully expressive champagne.
"One of the most original estates in Champagne ... a reference point for forgotten varieties ... the quality is consistently superb, and these are wines that are well worth seeking out." Peter Liem
The NV Brut is pretty, delicate and understated, with hints of dried pear, flower and mint that are laced throughout. Soft and inviting throughout, the brut is a great introduction to the Aubry Champagnes. The feminine, gracious finish only adds to the wine's considerable appeal. The current release is 50% 2012 and 50% a perpetual reserve that goes back to 1998. Dosage is 5.5 grams/litre.
