- Biodynamic and high quality Marne Valley producer

- Spicy, red-fruited style of Meunier with low dosage

- Pairs well with a Salmon Poke Bowl

The spicy red berry fruits of meunier are on grand display here, brimming flamboyantly with raspberries and wild strawberries, underscored confidently with sarsaparilla, fruit mince spice, fruit cake and boiled sweets – not from dosage but from ripe, expressive fruit. An expressive take on meunier. Tyson Stelzer

Midway between Reims and Château-Thierry and 6 kilometres north of the river Marne, the tiny village of Cuisles is unique for its green illite clay soils and low rainfall. Here, four generations of the Heucq family have adopted an increasingly attentive and sustainable approach in their family vineyards and winery. The path to conversion to biodynamic viticulture fulfils an aim to reactivate microbial life in the soil to enhance terroir expression, and coincides with the construction of a new ecological cuverie with natural ventilation, collection of rainwater and self-sufficiency in solar electricity. Unusual in Champagne, the same facility also serves to house all the pickers, who are trained to be particularly discerning in what they harvest. Meunier is naturally the focus in this part of the world, though chardonnay and pinot play a significant role in most cuvées, too. Vinification is refreshingly intuitive, with each parcel fermented and aged separately in stainless steel tanks or used oak barrels from Meursault to suit, and malolactic fermentation encouraged or blocked selectively. Cuvées are aged long and dosages are low. Informative back labels declare crus, cépage and time on lees. For such a small estate, its huge portfolio of no fewer than 20 cuvées must be one of the most diverse in Champagne, with many labels comprising fewer than 1000 bottles. The finest cuvées of André Heucq epitomise just what can be achieved in lesser terroirs with sufficient determination and focus. Tyson Stelzer
