- Premium selection of fruit with extended ageing
- This is where Pommery shines, a well-polished wine
- Pair with aged parmesan and some iberico ham
The style here is rich, flavourful with biscuit, toast and swirls of red apple, ripe citrus fruit and some ginger biscuit spice. It's a wine that hits well above its weight and delivers layer upon layer of flavour. Treat yourself to a great champagne.
One of the Grand Marques of Champagne and rightly so. Madame Louise Pommery took over the small family vineyard at a young age after the unfortunate passing of her husband left her with a young child and an even more immature business in the Pommery & Greno Estate. With sheer perseverance, a generous sense of spirit and a pioneering mindset, Madame Pommery challenged the ideas of champagne production and changed the business forever by creating the first brut (dry) champagne.
Chef de Cave Clement Pierlot is doing a great job to not only nail the consistency and quality of their flagship Brut Royal but take a step up the champagne ladder with Pommery to see their real skill. Brut Apanage and Summertime Blanc de Blancs are both delightful cuvees and would hold their own at a connoisseur's dinner party.
The main difference between the Brut Royal and this beautifully crafted Apanage is a longer time on lees, 3.5 years and over 20 crus (Villages), which are mainly grand cru and premier cru sites. The dosage sits between 8-9 g/l residual sugar. As with all Pommery wine making, full malolactic fermentation is encouraged as is the use of stainless steel.
Serve this well-crafted champagne as an aperitif with a plate of French cheese and some pancetta.
