This vintage rosé features a luminous and brilliant visual presence with a sustained salmon pink hue and draped in a graceful effervescence.

It is a refreshing sensory expression of citrus peel and red berry jelly. With the exquisite sensation of a rich and complex aromatic amplitude (Plougastel strawberry, Mara des Bois and vine peach). Pretty refined and mature olfactory notes, respectfully declining the inimitable scents of sweet spices and wild raspberry pulp.

A measured power while delicacy and tasty at the same time, with the harmonious development of gourmet flavors (mandarin orange, blood orange and reinette tart). A full-bodied, full-bodied structure, progressing to a chalky hint on the lingering finish of citron zest and red and white currants.

This great wine of extreme refinement signs its personality with a great delicacy of texture and flavour. 

Technical details: 55% Pinot Noir from the Montagne de Reims and the Grande Vallée Marne and 45% Chardonnay from the Côte des Blancs. This is a rosé d'assemblage grapes for red wine come from '' Valofroy '' old (sloping) vines of Mareuil-sur-Aÿ facing south.

The wine features a dosage 7g / l and partial malolactic fermentation. It has been matured on lees for 10 years.

 

One of the leading families of Champagne, this medium sized, high quality domain is one to be admired. Billecart-Salmon (Pronounced beel-kahr sahl-moh) have a fresh, clean and elegant style. They champion the use of the meunier grape which is often added to other cuvées without fanfare in other houses. The absolutely pristine wine making facilities located in Mareuil-Sur-Aÿ are overseen by multiple generations of the family as well as chef winemaker Francois Domi. The house purposely ferments at a lower temperature elongating the ferment to weeks and not days as can be standard in champagne, which helps capture the pristine nature of the fruit. Every step of the wine making process at the house is artful, right down to the precision of the dosage which is unique for every disgorgement conducted in batches. 

To celebrate the arrival of this highly-anticipated champagne, Emperor will be hosting two events, in partnership with Champagne Billecart-Salmon. The Melbourne event is completely sold out but we do have limited tickets available for the Sydney event on 22 May.

Reviews

The electrifying energy of 2008 charges Elisabeth Salmon with a dynamism and an endurance like never before. To capture such precision and such concentration of pure red cherry and raspberry fruit and yet at every instant to remain steadfast to the elegance and refinement that is Billecart is the profound juxtaposition that elevates 2008 to dizzying heights. Testimony to the depth of south-facing Mareuil pinot noir even in a season as cool as 2008, just 9% red wine is all that it takes to infuse a pretty, medium salmon hue that has taken on a copper tint in time. It confidently takes 13 years in its stride, revealed only in the most subtle nuances of vanilla and marzipan. With time in the glass, it billows to incredible heights of spice and even suggestions of fruit mince spice. A little fermentation in old oak barrels builds texture and integration more than it does a subtle nuance of jamon. Partial malolactic fermentation in a season with malic acidity as pronounced as 2008 is a nail-biting affair, perfectly played by chef de cave Florent Nys. Radiant acidity spirals with minerality as fine as ground glass to build a shimmering jetstream that slices through a finish of endless blue daylight. It is dashing from the outset, yet possesses decades of potential coiled into its graceful yet commanding folds.
