Since 1984 it has been run by Pascal Agrapart (pictured), who has taken the domaine to ever-greater heights, emphasizing natural viticulture and the expression of terroir.

Agrapart's vineyards are spread over 70 parcels, the majority of which lie in the grand cru villages of Avize, Cramant, Oiry and Oger. Average vine age is about 35 years, with the oldest vines in Avize over 60 years. Pascal Agrapart is uninterested in being labeled as either organic or biodynamic, but he does feel that it’s important to work according to natural rhythms and sensibilities, and both the vineyard work and the work in the cellar follow this philosophy. No chemical pesticides or weedkillers are ever used, and all of the vineyards are worked manually, encouraging the roots to descend deeper. Agrapart places great importance on the proper technique and timing of pruning to control vineyard maladies, and some homeopathic treatments are also used in the vines to control parasites.

As expected for a Champagne estate that places a strong emphasis on viticulture, the average potential alcohol at harvest is very high here, normally around 11 degrees, and Agrapart virtually never chaptalizes any of his wines. The grapes are pressed with a traditional Coquard vertical press, and fermentation is carried out with natural yeasts, which Agrapart feels is crucial to the expression of terroir. Malolactic fermentation is completed for all the wines, and a portion of the best wines of the harvest are aged in old, 600-liter demi-muids: “the older the better,” says Agrapart, as he hates the flavors of new barrels. It was put up for auction in 1937 and purchased by René Chayoux, the son of an Epernay wine merchant. Chayoux was actively involved in various business affairs in the region, and eventually became co-president of the CIVC from 1944 to 1955. He enlisted Jean-Michel Ducellier, director of the CIVC and a former finance director of Charles Heidsieck, to help him run the house, and upon Chayoux’s death in 1969, Ducellier assumed responsibility for the house until his retirement in 1995.

Ayala was sold again in 2000 to the Frey group, and Thierry Budin, a former president of Perrier-Jouët, took over the helm. The indefatigable Godefroy Baijot, who is the Global Export Manager, and talented winemaker Cedric Thiebault lead this maison. The most distinctive asset to this house is that all of their wines are made using low bar pressure. For those of you who may not have come across this, most champagne is made at 6 bar of pressure where as Besserat make it at 4.5 bar. How does this make the wines different? The good news is that there aren't any less bubbles, instead, the approach of the bubble on the palate is more delicate, which makes them especially suited to pairing with foods of all kinds.

["gift guide","Low Bar Pressure","No Malolactic Fermentation","Region: Epernay","Taste: Autumn Apple","Taste: Biscuit","Taste: Creamy","Taste: Ginger Biscuit","Taste: Low Bar Pressure","Taste: Nashi Pear","Taste: No Malolactic Fermentation","Taste: Pinot Meunier Dominant","Taste: Rockmelon","Taste: Stainless Steel Fermentation","Taste: Yellow Plum","Under $100","Year: NV
"option1":"Single","option2":null,"option3":null
https://cdn.shopify.com/s/files/1/1922/1617/products/Besserat-de-Bellefon-Cuvee-des-Moines-Brut-Champagne-Emperor.jpg?v=1591167475
556980830236
["Single
https://cdn.shopify.com/s/files/1/1922/1617/products/Besserat-de-Bellefon-Cuvee-des-Moines-Brut-Champagne-Emperor.jpg?v=1591167475
["//cdn.shopify.com/s/files/1/1922/1617/products/Besserat-de-Bellefon-Cuvee-des-Moines-Brut-Champagne-Emperor.jpg?v=1591167475
//cdn.shopify.com/s/files/1/1922/1617/products/Besserat-de-Bellefon-Cuvee-des-Moines-Brut-Champagne-Emperor.jpg?v=1591167475
Please select
https://cdn.shopify.com/s/files/1/1922/1617/products/Besserat-de-Bellefon-Cuvee-des-Moines-Brut-Champagne-Emperor.jpg?v=1591167475
https://cdn.shopify.com/s/files/1/1922/1617/products/Besserat-de-Bellefon-Cuvee-des-Moines-Brut-Champagne-Emperor.jpg?v=1591167475

- Low bar pressure style of champagne across the house

- Easy drinking style, made to pair with food.
