Cuvée Rosé is a style of champagne made from a single grape variety, Pinot Noir which is the dominant variety on Elise Dechannes estate. All fruit is also from a single harvest. She vinifies her wines in temperature-controlled stainless steel vats, the simplest possible method of vinification. Dosage is incredibly miniscule, between 0 and 0.1 g/L. If any dosage is added, it is because Elise considered it necessary to offer her cuvée with the greatest accuracy.
Today, few winemakers or major champagne houses offer a rosé de saignée without dosage. It is one of the rare goldsmiths of bubbles to vinify a rosé de saignée with such simplicity and precision, for a result of great finesse.
Born into a family of Champagne winegrowers in the heart of Ricey’s renowned vineyards, Elise Dechannes has been nurturing her lifelong passion since 2008 by crafting a range of champagnes in her image – fine, elegant and subtle.
A graduate of Reims Business School, she left a very accomplished career in the financial sector to pursue a more relaxed lifestyle. She returned to her family farm and took over the winemaking. She is an earnest and dedicated spirit committed to healthy farming, working towards all organic and biodynamic practices. She has even chosen to plow her vineyards traditionally with a horse rather than use heavy machinery like tractors.
